Our current operational fleet consists of four, EU-compliant, wet fish trawlers; namely the “Villa de Hio”, “Ocean Tide”, “Ocean Wave” and the “Wiron 5”. All these vessels rely on the "Bottom Otter Trawl" (OTB) method of catching. We have chosen this method due to its efficiency and reliability.
Once the catch lands on deck it undergoes an inspection and then initial processing is done; heading and gutting the fish and placing it on ice in 28kg bins. Vessels in our fleet have a carrying capacity ranging from 95 to 180 tons.
Should the need arise to supply more than our fleet can accommodate, we can call on our wide range of industry contacts and additional vessels can be chartered. This enables us to ensure a continuous supply of Hake to our processing facilities and meet even the most demanding supply needs.
We have the facilities and personnel to service and maintain our fleet entirely in-house. Our experienced and dedicated engineering department keeps all our vessels running smoothly and is also responsible for any and all refitting the ships require.

Chunks or offcuts of fish, generally produced from a filleting or portioning operation. Chunk sizes will vary, and they should be skinless and boneless.
Thoroughly cleaned but with head-on (head removed is usually called pan-dressed). Both forms are ready for stuffing and are generally cooked in one piece. Fish that have been gutted and scaled with gills removed. Usually, the fins are removed as well.
Gilled, Gutted / Scaled
Fish that has been dipped in water after freezing. Ice forms a glaze around the fish, protecting it from damage by freezer burn.

Individually Plastic Wrapped
Individually Plastic Bagged

A box of frozen fish fillets separated by interleaved polyethylene sheets. Dropping the box, "shattering" the pack, can separate fillets.
A cross-sectional slice of a fish, usually 1/2 to 2 inches thick and contains a section of the backbone.
Fish sold just as they come from the water also called landed or round weight. They must be dressed before cooking.
